Half-Mile Farm's manager, Paige Tilung, asked Julia to share some insider perspectives on this decidedly Southern dish:
P: What are some additions to grits that people don’t normally think of?
J: Well, my mother used sausage, mushrooms, and sautéed spinach. I’ve never heard of that version anywhere else, but that’s how she did it. You can see the recipe for “Ave’s Savory Spinach and Sausage Grits" along with others on our site.
P: How can we always turn out amazing grits when we cook them at home?
J: Don’t just use water; use chicken stock, heavy cream or milk, and lots of butter! Dress it up with any seasonings you like. And definitely cheese! When I told Chef Jason about the cheese I thought he was going to die. Well, he is the chef and I’m just the grit maker, but I do love cheesy grits!
P: What about spices and seasonings, any go-to grit faves that we need to try?
J: Cavender’s Greek seasoning is my favorite. Along with some fresh garlic, salt, and pepper. My mom used to put Cavender’s on cantaloupe and tomatoes in the summertime. I use it on everything.
P: What memories will you take away from your weekend with us?
J: I just love all the people at Half-Mile Farm. Paige, here, is my favorite. And the feeling when you first drive in and see the white home on the hill. It’s just very calm and serene, and then as soon as you walk in the doors as well, there’s all the smiling faces. Everyone is so friendly. And the décor, and just the feeling. It feels homey and cozy and just plain comfortable.
